You need to go to the Modifier list drop down selection and select "Unwrap UVW" at which point you'll be able to edit it.
When I'm messing with a UVW that uses a .plt I use gimp to merge it's layers then flatten the image and save it as a .tga in the directory I'm working in. So when I go to edit the UVW I have something to use a reference. That .tga has to be in the directory before you open the model to have it show up it's grey scaled, but if you have the .plt open in nwnexplorer you can generally find your way around on it.
Edit:... Oh almost forgot select the poly's via "+Editable Mesh "you want to mess with before you put the "Unwrap UVW" on the stack and attempt to edit. And If you deside you need to edit more of them save and reopen the model
and repeat as ness.

Maybe someone can tell us both a better way to attack the issue... I can always hope can't I?
