For what it's worth, I seem to be at the opposite end of the spectrum regarding preferences and would personally disagree with almost everything the OP writes.
I love Torment, hold BG2 in high esteem and find NWN's OC kind of meh. Then again, I can appreciate good writing and prefer gripping stories to epic randomness, I don't feel any urges to kill off all NPCs I don't like and would think such behavior the most base and uninteresting representation of an evil PC. Torment offers satisfying options for an evil PC, but they're more subtle and there's no clear black and white. I don't think the same could be said of NWN, but I might be mistaken as I never bothered to complete the OC. Anyway, to each their own. The world would be a boring place if everyone liked the same things.

And I will admit, that in BG1 (yawn!) I too was annoyed at Minsc whining and turning against me, and that I got rid of Jaheira by allowing a wild bear to prey on her, while her companion wasn't looking. Now if that isn't evil, I don't know.

Btw, if you haven't done so yet, check out the community modules on IGN Vault - there should be lots of well-made modules for evil characters.
