Well, that's is kinda what I was hoping to find a way to do...
The problem there is that the model/icon pair is fixed in the baseitems.2da and the filename.To equip a "helmet" baseitem it *has* to be named "helm_" followed by a 3 digit number. It *has* to be paired with an icon named "ihelm_" followed by the same number (no icon = no helmet. no model = no helmet).
Making a new baseitem (it_kistone) gives me a new category of helm-like items... but the icon/model pair remains fixed. If I put that icon in the helmet slot, *that* model (and no other) *will* replace the head. Period.
