question about equiping weapons 2 handed

               Can I alternate between equiping a bastard sword or katana between 1 or two hands?

I have the PRC Mod Pack installed if that makes any difference.

I would like to have the ability to go sword and board or two handed for the strength bonus depending on the situation but I can't seem to figure out a way to equip a bastard sword or katana two handed.

Was that a pen and paper rule that never made it into the game?

Yup.  That's pretty much it.  In NWN, each weapon type is wielded in one hand or two, depending on the weapon. There isn't a way to switch a weapon's type of wielding in-game.

You could wield a bastard sword two handed if you played a gnome or halfling, but that would mean two-handed use at all times (just like all medium weapons in the hands of the smaller PCs).  Otherwise, for medium-sized PC races it's a medium weapon and that means 1-handed wielding.
