My advice on starting out is to do what I and, I believe, TAD did. Start by renaming a model & texture so you don't over-write the originals. The change all the "bitmap" references in the model to point to the new bitmap.
Then load up the texture and have your way with it ;-)
(Edit: And I honestly recommend the
GIMP for texture work unless you're lucky enough to have Photoshop. Choice! ;-)
Save often.
Test often.

Just a caveat on the CEP, one that bit me somewhere tender...
Some of the models there are rather questionable, copyright-wise. The one that got me was the treegiant model that I had hoped to use as a base for my Forrestal.
It was ripped from World of Warcraft (this was brought to my attention with url link to prove it, btw), and therefore unusable for me :-( I admire the blazes out of the CEP team, but one rotten piece means I simply can not *assume* the provenance of any of the others.
In general, I use CEP to find a decent model and then track down it's source, either in a separate hak on the Vault or clearly attributed in the CEP credits. If I can't find the source, I simply can't use it.
Last thing I'll need down the road is a "cease and desist" order after I get everything working :-/
