Question about the packages for each classes...

               I'm a bit confused, I wanna be a Paladin, Champion of Torm. If I configure the package myself, does that mean I won't be a Champion of Torm? It says it just configures your settings so you can become later on.

               Always configure yourself the package so that you get to choose how to assign skillpoints and which feats to select and stay away from the recommended button as if it were the plague. You'll be able to be a Champion of Torm anyhow by meeting the prestige class' prerequisites which you'll do manually (and which, configuration wise, consist simply in getting Weapon Focus: "melee weapon of choice", the rest is a non evil alignment and +7 BAB) so that something else doesn't get screwed up.

               So I won't become a champion of torm until later on? Is that the same with the other Paladin classes like inquisitor and such?

               champion of torm is a prestige class.  

inquisitor is a package of default feat/skill choices for the Paladin class.

               Champion of Torm is a prestige class and hence you need to fulfill some prerequisies before you can take a level in it.

What you call "other Paladin classes" are just arbitrary names assigned to specific preset "packages" of skillpoints attribution and feats selection which is what you should stay away from. Decide yourself what you need your character to get, possibly with the help of a friend/forumite who knows more the game (I mean, you can ask here or even at the forum linked in my sig which is dedicated to creating character builds for NWN) and by improving your knowledge of the game and its mechanics which can be done by reading the NWN Grimoire and accessing and studying the info contained in the NWN Wikia.
