Head Conversion for Overrides

               How would I go about converting NWN2 heads into NWN1? And how difficult is it?

               erm, your topic title is really misleading. You may have more replies with something like "NWN2 heads conversion", or even how to convert NWN2 models to NWN1. Just a suggestion =)

               As far as I know (Though I'm not an expert at all), NWN2 heads aren't static models like NWN1's heads are, they've got changeable textures (Scars/tattoos), and changeable hairstyles.

So at the very least, you'd need to cobble together a single model in a 3D modeling program, from all the various head-parts you like, and then convert that to NWN1.

               Sounds a little out of my league, as someone who's never fussed with nwn models and individual head parts..

               as Eradrain said, combine head+eyes+hairs/beards, then merge the textures in a single one, fix the uvx and create the plt (and a small neck edit to have the head fit in nwn1 torsoes)
