Okay, first a disclaimer: I'm anything but an expert on this subject. That being said, I've been enjoying this game for about five years and have learned a bit from some very knowledgeable folks. So, on to your specific questions --
1. Should I bother Multiclassing?
I certainly think it is a good idea, especially since you are interested. I'd say most people agree multiclassed characters are more 'uber', but I think your desire to experiment is really the more important concern here. As the official campaigns are considered to be viable with most any character, this is the time and place to test new ideas in characters.
2. If so, Recommendations?
Well, rogues are great. Since you're interested, I'd say go for it. My first NWN experience was a pure rogue in the OC, and I loved it! Fighter/rogue is a rather classic combination; check the
builds from the Epic Character Builders guild, if you would care to.
3. And at what level?
I'm really getting out of my depth here, but I would say 7th level would be good, at least to pick up skills such as Tumble and Use Magic Device (UMD). Since these skills improve in increments of 5 points, 7th level is a natural (allowing for an investment of 10 points). To play it safe, I should mention the concept of skill dumping (in case you're not familiar with it); a character with multiple classes may buy skills at the lower "class Skill" rate (as opposed to the "Cross class" rate) and buy up to
character level + 3, not just
class level + 3. Therefore, a character gaining level 7 and choosing rogue may buy 10 points in Tumble (level 7 + 3), all at the rogue's class Skill rate. This "loophole" allows for the accumulation of greater skill levels than would be possible otherwise.
